
COMPLEX FOR SPRAYING AND SPREADING BISCUITS

The syruping and spreading complex for biscuit cakes is one of the production lines of our manufacturing, the main goal of which is automated and efficient production of biscuit rolls in large quantities, adhering to high standards of quality, aesthetics, and ensuring a long shelf life.
The line covers the entire production cycle:
- Cutting process
- Syruping process of biscuit cake
- Spreading process of biscuit with cream (filling)
- Transportation process to subsequent operations (rolling into rolls).
The standard equipment of the line for syruping and spreading biscuit cakes includes:
- Biscuit soaking machine – designed for soaking various confectionery products with syrup (liqueur). Thanks to this machine, the product’s taste becomes softer and more aromatic. The conveyor is integrated into the existing line, so the blanks/cakes after cutting are transported by a belt conveyor for syrup soaking. However, there is the possibility to use soaking equipment as a separate production unit with manual feeding of biscuits.


On the control panel, the operator selects the operating mode of the conveyor system for soaking biscuit cakes:
- Start\stop mode, the cake moves on the conveyor belt to the cake sensor and comes to a stop under the syrup spray nozzle. In addition, the conveyor is equipped with stops that ensure the positioning of the workpiece under the nozzle, the dosing of the syrup for soaking and the direct spraying of the syrup onto the biscuit.
- Watering mode, the cake moves along the conveyor belt without stopping, and the soaking with the syrup is carried out by pouring water over it like a wave.
2. Belt conveyor – for the food industry, it is a transportation system used to move products on the production line in food production. All materials used to manufacture the belt conveyor have food approvals, certificates, and permits.
3. Piston filler for filling – a device used for accurate measurement and application of cream or other products with a thick consistency. It consists of a piston moving inside a cylinder controlled by a mechanism. When the piston is pressed, the cream is dispensed from the container through a reliable dosing mechanism, allowing precise measurement of the required amount of cream.


The main components of the piston filler include:
- Frame with a carriage that moves vertically. A hopper is mounted on the carriage and the height of the hopper can be adjusted from 0 to 120 mm. The height is set in the line control programme.
- A 70L bunker with autonomous heating by heating elements (TEN), inside which a mixer is placed for cream mixing.
- Two easily removable matrices, each with 3 pistons. The volume of each piston is 215 cm³.
- STM/MOTOVARIO (Italy) or equivalent motor-reducer.
- Control cabinet.
The principle of operation:
Using pistons, the cream is first drawn through a distribution shaft into the piston cylinders from the bunker, and then after the rotation of the distribution shaft (using a pneumatic cylinder), the pistons extrude the cream into the doser. The cream then goes directly from the doser onto the biscuit cake.
The doser can be easily removed and replaced with nozzles or fillers, or another volumetric doser (with different parameters of length, width of the gap). Similarly, the bunker with matrices can be easily removed for cleaning and subsequent washing.
The movement of the pistons is regulated by electric cylinders, allowing the cream dosage in the cylinder to be adjusted, which is then extruded onto the cake.
Presence sensors (catchers) are installed on the conveyor belt along which the cake moves, so that cream dosing is done directly onto the cake, not outside it.
The entire complex is equipped with a single control panel with a touch screen for the simplicity and convenience of the operator’s work. The screen displays the operation of conveyors, syrup soaking machines, and piston fillers in the selected mode, allowing control of the process at every stage.
After the cutting, soaking, and spreading processes, the operator manually selects the cakes from the conveyor and passes the blanks to the next processes. Optionally, the complex can be equipped with the next process – rolling into rolls. The machines are made of AISI304 stainless steel. At the customer’s request, other grades of steel or materials for components can be used.
